This is of course a poor man’s version of Mien Feng Kao (chinese pasta soup). You could make this with luxurious ingredients like king prawns or various green vegetable for the soup! Up to you to experiment.
This recipe should be enough for 2.
Ingredients for the dough:
- 1/2 cup of plain flour
- 1/4 cup of water
- Salt to taste
Mixed flour, water and salt together. knee for few minutes to form a ball. Set aside (covered) for later.
Ingredients for the soup:
- 800ml Chicken stock
- 1 onion (finely chopped)
- 2 chicken drumstick (de-boned and cut into chunks) or chicken breast pieces
- 1 carrot ( sliced)
- 2 tbs soy sauce
- Salt and black pepper to taste
- 2 Eggs
Fry onion in oil until lightly brown. Add in the chicken stock and bring to boil. Put chicken pieces and carrot in the soup.
Meanwhile, pull small part of the dough thinly and tear it with you finger tips and drop it in the boiling soup, repeat the process with the whole dough. The paste pieces could be in any forms. No need to worry about uniformity here!
Cook the dough in the soup for few minutes and add soy sauce.
Crack the eggs separately and drop it into the soup and porch for few minutes, then serve hot and garnish with spring onion or coriander.
Quick and easy for a lazy cold night!
