Braised chicken


  • 5 Chicken thighs
  • 1 bulb is garlic
  • 1 fresh chili
  • 1 dried chili
  • Few star anise
  • 1 tsp cloves
  • 1 tsp of black peppercorn
  • salt and pepper to taste
  • 4 tbsp dark soy sauce
  • 2 tbsp balsamic vinegar
  • 1 cup of white wine
  • 2 cup of water
  • 4 tbsp sugar
  • 3 tbsp oil

Fry garlic, fresh/dried chilies, peppercorn, star anise, cloves and salt in a deep pan until aromatic. Add chicken pieces to the pan and seal chicken to lightly brown. Add dark soy sauce, water, wine and sugar to cover the chicken (add more water as necessary) and bring it to boil. Lower the heat to medium heat and cook the chicken for 20 mins or until the sauce thicken.

Garnish with green vegetables and serve hot with rice.
