Poach Chicken in Fresh Herb Sauce

This is quite a summery dish, serve the tender and juicy chicken warm with fresh mixed herb sauce. It has a very natural and primitive (in a good way!) when eating this dish, a combination of fresh “grassy-ness” of the herbs and “rawness” of the chicken. Quite a bit of back to nature kind of feel, eating-the-food-as-you-found-it kind of feeling!

For the fresh mixed herbs sauce, blend together 1 cup of mixed herbs such as chives, flat leave parsley, coriander, 1/2 a chilli, a couple tbsp olive oil and chicken stock, 1/2 of the lemon juice and salt & pepper to taste.

Poach the chicken (corn-fed) in a deep stainless steel pot with various vegetables (covered). I have 1 stalk of leek, handful of coriander, few carrots, few pepper corns, few cloves of garlic and ginger. Pour in the water  enough to cover the chicken. Season the stock with salt.

Bring the water to boil for 5 – 8 min, and switch off the fire and leave it to cook for few hours or until ready. Do not open the cover, if you can!

Serve warm…
