“Stickie – Stickie”: Aduki + Tapioca Pudding

Today, I have the strong desire to eat something sweet and heavy! Tapioca is a rather “heavy” ingredient when it is expanding in your stomach! But it is also quite a tasteless ingredient!

I thought I am going to make something a bit crazy! Aduki beans + Tapioca = ???. I think it is a kind of pudding! A very STICKY one! But rather satisfying!

I make this recipe up, It might be too personal taste to other people, you might not like it..but I thought I warn you first!


  1. 1 tin of aduki bean
  2. 1 cup tapioca
  3. 1/2 tin of coconut milk
  4. 2/3 cup demerera sugar
  5. 1 tsp lemon grass powder
  6. 1 cup water

Soak tapioca in water for few minutes, and drain. Set aside. Put the aduki, coconut milk and sugar in a heavy pan, and bring to boil. Pour in the tapioca, and turn the hear to low, add lemon grass powder. Add water and simmer until the tapioca is cooked. It will turns sticky!

Scope the pudding in small bowls, set aside to let cool.

For the syrup, put the remaining 1/2 can of coconut milk, 1 cup of sugar, 1 tsp lemon grass powder in a clean pan, and bring to boil over high heat and cook until the mixture is thicken.

To serve, tip the aduki pudding from the bowl in a serving plate, and spoon over the syrup on top of the pudding. Serve warm.

Note: Serves this dessert in small quantity!!
