Lamb & Wild Garlic Burger

Came across wild garlic leaves at the Borough Market in London yesterday afternoon. It has the strong and appetising fragrance of garlic, obviously! I have not cook these wild garlic leave before, so I thought I will get some  of it to play in the kitchen!

I was thinking to make wild garlic leaves pesto, but my newly bought mini chopper is useless! It can not even chops the leaves! I wondered why Delia associates her name with it! ;)

Instead of pesto, I made lamb and wild garlic burger!

Ingredients: (Make 4-5 burgers)

  1. 250g minced lamb
  2. Handful of wild garlic leaves (chopped finely)
  3. 1 shallot (chopped)
  4. Small piece of ginger (minced)
  5. Salt and pepper (to taste)
  6. Handful of wild garlic leaves (sliced roughly)
  7. 1/2 lime juice
  8. Oil to fry the meat

Mix lamb, chopped wild garlic leaves, shallot, ginger together, season with salt and pepper. Divide the meat equally and form individual burger. Set Aside.

In a hot pan, fry the meat until cooked, and set aside to stand. Drain the excess oil from the pan. Heat the pan and add the lime juice and stir rigorously to combine the oil and juice together. Stir in the sliced wild garlic leaves. Season to taste.

Serve the burger with the wilted garlic leaves and sliced beetroot…mmmm…
