How quick can you make a simple yet delicious lunch for 2?

8 mins!

I have these risoni pasta in the cupboard for months, wasn’t sure what to do with it…

I have been thinking about risotto, but can not be bother put in the effort to make one, so I thought, MAYBE, risoni pasta could be the substitute for risotto!

To make everything in 8 minutes, you need to have a bag of frozen mix vegetable, a package of seafood selection. NO PREPARATION!

Ingredients:

  1. 250g risoni pasta
  2. 1 pack of seafood selection
  3. Generous amount of frozen mix vegetable
  4. Onion (chopped)
  5. Dried coriander leaves
  6. Salt and pepper to taste
  7. 1 tbs dark soy sauce
  8. 1-2 tbs Olive oil
  9. Cayenne pepper (to taste)
  10. 1  tsp smoke paprika

First, cook the pasta, it will takes around 6-7 mins to get the pasta ready. While the pasta is cooking, in a separate pan, heat the oil, lightly brown the onion, and add all the seasonings. Throw in the frozen vegetable, and cook  for few minutes, then add the seafood selection and cook for another few minutes! When the pasta is ready, in around 6-7 minutes, pour the seafood and vegetable mix to the pasta, stir well and cook for for further 1 minute!

Garnish with fresh herbs or anything green! Voila!
