Honey Roast Pork Belly with Apple Sauce and Vegetable

Personally, I quite like the Chinese flavour of this roast pork belly. I marinate the pork overnight with the following ingredients:

  1. Generous amount of Chinese 5-spice powder,
  2. 2 tbsp oil,
  3. salt & pepper (to taste),
  4. 1 tbsp oyster sauce (optional).
  5. 1/2 lemon juice

Stab all over the pork with knife. Mix all ingredients together, and rub the mixture to the pork (including the skin). Leave to marinate overnight (in the fridge or a cool oven).

Pre-heat the oven to 180’C, sprinkle coarse sea salt on the skin of the pork. Roast the pork skin side up for 1 hour. After that, rub generous amount of honey onto the skin and roast for further 30 minutes.

Once done, leave the pork wrap in foil for 20 minutes before serving. The roast is nice with apple sauce or chili jam.

Simple Apple Sauce:

  1. Apple (core and cut to chucks)
  2. 1 zest of lemon
  3. 1/2 lemon juice
  4. 2 tbsp sugar
  5. 4 tbsp water
  6. knot of butter

Put all ingredients (except the butter) in a pan and cook until the apple is soft and remove from heat. Add the butter to the apple and mash lightly the apple to leave some texture to the sauce. Serve warm.
