Savory Bacon and Onion Muffins

An adaptation of cheese muffins recipe.

Ingredients: make 8

Group 1:

  1. 1/2 cup bacon (roughly diced)
  2. 1 onion
  3. 1 tsp smoked paprika
  4. 1 1/2 tsp chili powder
  5. 1/2 dried thyme
  6. 2 tbs cooking oil

Group 2:

  1. 1 1/2 cup of plain flour
  2. 2 tsp baking powder
  3. 2 tbs sugar

Group 3:

  1. 2 eggs (medium) or 3 eggs (small)
  2. 1/2 cup of milk
  3. 3 tbs melted butter

Preheat oven to 190’C.

Cook ingredients Group 1. Soften onion, and lightly brown the bacon, add paprika, thyme and chili powder. Salt and pepper to taste.

Sift ingredient Group 2 in a mixing bowl. Mix everything together well.

Whisk ingredient Group 3 in a separate bowl.

Add milk mixture to the dry ingredient, and mix. Add in ingredient group 1 to the mixture and combine well.

Line muffin tin with muffin papers and divide the batter equally to 8 prepared cups and bake for 25 mins until puffed and golden.

Serve warm or at room temperature. Good picnic food I reckon!
